Rösti with Bacon with fried egg, fried mushrooms and mixed salad
This delicious recipe combines hearty enjoyment and fresh flavors: Rösti with Bacon, perfectly fried and combined with a fried egg, juicy mushrooms and a colorful salad mix.


Ingredients
For 2 people:
- 2 packs of Pahmeyer Rösti with bacon (240 g each)
- 150 g mixed, colorful salad
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar bianco
- 1 tsp mustard
- 1 tsp honey
- a little salt and pepper
- 400g brown mushrooms
- 1 red onion
- 30 g clarified butter
- 2 eggs, size M
- 1-2 tbsp parsley, chopped
Preparation
- Prepare the Rösti with bacon according to the packet instructions.
- Wash and dry the salad.
- For the mustard and honey vinaigrette, whisk all the ingredients together well and season to taste.
- Mix with the salad.
- Clean and halve or quarter the mushrooms.
- Peel, halve and finely dice the onions.
- Heat 20 g clarified butter in a pan, add the mushrooms and sauté.
- Fry over a medium heat with the onions for approx. 5-7 minutes.
- Fry the fried eggs in a pan with 10 g clarified butter over a medium heat.
- Arrange the Rösti with bacon with fried egg and mushrooms on plates, sprinkle with parsley and serve with salad.
