Sweet Potato Rösti with fajita vegetables
When crunchy vegetables meet the slightly sweet taste of sweet potato Rösti, the result is a real feast for the senses! Perfect for anyone who likes things light and full of flavor - a taste highlight!


Ingredients
For 2 people:
- 1 pack of Pahmeyer sweet potato Rösti (300 g each)
- 1 small zucchini
- 1 yellow bell pepper
- 1 red bell pepper
- 1 tbsp olive oil
- some fajita seasoning (alternatively smoked paprika powder, garlic powder, cumin, oregano, salt, pepper)
For the guacamole:
- 1 ripe avocado
- 1 small red onion, finely diced
- 8 cocktail tomatoes, diced
- 1 tsp lime juice
- 1 teaspoon agave syrup
- a little salt and pepper
Preparation
- Prepare the Pahmeyer sweet potato Rösti according to the packet instructions.
- Wash the vegetables and cut into fine strips or cubes.
- Sauté in olive oil in a frying pan over a medium heat.
- Season with fajita, season to taste and turn off the heat.
- For the guacamole, scoop out the avocado flesh and mash finely with a fork on a plate.
- Mix with the remaining ingredients and season to taste.
- Arrange the sweet potato Rösti with the vegetables on 2 plates and serve with the guacamole.
