Sweet Potato Rösti with red cabbage and feta cream
Golden-brown sweet potato Rösti meet fresh red cabbage and a spicy feta cream - a harmonious interplay of colors and flavors.


Ingredients
For 3-4 people:
2 packs of Pahmeyer sweet potato Rösti (300 g each)
2 red onions
1 apple, e.g. Boskop
1 tsp oil
720 ml red cabbage in a jar
2 tbsp curly parsley, chopped
1 tsp red wine vinegar
1 tsp agave syrup
a little salt and pepper
250 g feta cheese
150 g cream cheese
2 tbsp olive oil
3-4 tbsp milk
1 tsp agave syrup
a little pepper
handful of walnuts, chopped
Preparation
- Prepare the Pahmeyer sweet potato Rösti according to the packet instructions.
- Peel the onion, halve and cut into thinner slices.
- Peel the apple, remove the core and finely dice.
- Heat the oil in a pan, fry the onion and apple briefly, add the red cabbage and simmer over a low heat for approx. 10 minutes.
- Add the parsley and season with vinegar, agave syrup, salt and pepper.
- For the feta cream, puree all the ingredients in a blender and season to taste.
- Serve the Pahmeyer sweet potato Rösti with red cabbage and feta cream and sprinkle with the walnuts.
