Potato Pancakes Mini à la Pizza Margherita
Crispy potato pancakes mini meet Italian indulgence! Perfect as a snack, finger food or creative starter for fans of Mediterranean fusion cuisine.


Ingredients
For 1-2 people:
- 1 pack of Pahmeyer potato pancakes mini (300 g each)
- 1 small tin of tomato pizza sauce
- 6 large slices of tomato
- 6 slices of mozzarella
- Some fresh basil
Preparation
- Preheat the oven to 200°C top/bottom heat.
- Spread the potato pancakes mini on a baking tray lined with baking paper.
- Spoon a spoonful of tomato sauce onto each potato pancake.
- Spread the tomato slices, top with mozzarella and bake in the oven for approx. 20 minutes.
- Sprinkle with basil before serving.
