Potato Pancakes Mini with fruity-fresh avocado cream
Today, our potato pancakes mini are accompanied by a fruity, fresh avocado cream with lime and tomato. This combination is wonderfully refreshing for the palate - perfect for warm days too.


Ingredients
Ingredients for 3-4 people
- 2 packs of potato pancakes mini (300 g each)
- 1 large vine tomato
- 1 large, ripe avocado
- 1 tbsp lime juice
- 200 g cottage cheese (granular cream cheese)
- 2 tbsp flat-leaf parsley, chopped
- salt and pepper
Preparation
- Prepare the potato pancakes mini according to the packet instructions.
- Wash and quarter the tomato, remove the seeds and cut into small cubes.
- Halve the avocado, remove the stone and skin, add the lime juice and mash with a fork.
- Mix in the cottage cheese and season with salt and pepper.
- Sprinkle with parsley and diced tomato and serve with the potato pancakes mini.
