Potato Pancakes Mini in a berry French style
A classic reinterpreted: instead of toast, crispy fried potato pancakes mini form the basis for this savory-sweet version of French toast. Perfect as a creative breakfast or sophisticated main course - be sure to try it out!


Ingredients
For 1-2 people:
- 1 pack of Pahmeyer potato pancakes mini (á 300 g)
- 20 g butter
- 30 g sugar
- 1 tsp cinnamon, ground
- 100 g soft fruit (e.g. blueberries, blackberries, currants)
- 2 tbsp maple syrup
- a little mint
Preparation
- Mix the sugar and cinnamon on a plate.
- Clean, wash and dry the berries.
- Fry the potato pancakes mini with butter in a pan according to the packet instructions until crispy.
- Then dip directly into the sugar and cinnamon mixture.
- Decorate with berries and mint and drizzle with maple syrup if desired.
